How to Make Keto Chocolate Chip Peanut Butter Bars {Quick Overview}
This is just a quick overview of some of the steps involved in making the keto cookie bars recipe. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.
In a large bowl, mix all of the ingredients except for the ChocZero milk chocolate chips and optional sea salt.
Then fold in the chocolate chips.

Keto Peanut Butter Cookie Bars
Ingredients
- 1 cup unsweetened peanut butter
- 1 egg
- 1 tsp vanilla extract
- 1 cup Swerve Brown Sugar
- 1/2 cup milk chocolate ChocZero chocolate chips
- Sea salt optional; for topping
Instructions
- Preheat oven to 350 F.
- Line a 9×9 or 8×8 baking pan with parchment paper, leaving an overhang so you can easily pull out the cookie bars.
- Into a large bowl or bowl of a stand mixer, add peanut butter, egg, vanilla extract, and Swerve Brown. Mix with a hand mixer or stand mixer until the mixture is smooth.
- Fold in the chocolate chips.
- Add mixture to the prepared baking pan and smooth the top with the back of a spoon or spatula. If desired, sprinkle sea salt to taste on top of the mixture.
- Bake for 20 minutes.
- If the bars aren’t yet set in the middle, cover the pan with foil and bake for another 6-12 minutes. The bars will firm as they cool, so be careful not to overbake.
- After baking, allow the bars to cool, then transfer the bars to a cutting board using the parchment paper. Cut into 16 pieces.
